Simple Sausage Pasta For When You Are Too Tired to Cook

3 Ingredient Sausage Pasta Customizable To Your Liking

I’m coming at you writing this post during my “Hell Week.” I am not embarrassed to say that we had 4 delivery drivers come to our house within one 48 hour window. Sorry, not sorry. I was not expecting my remodulin site change to go this far south. I needed to make something of substance, and just happened to have all of the right ingredients for simple sausage pasta.

That one red patch kept me in bed for 3 days!

Add What You Want…Take Out What You Don’t

I no longer have the energy (or supplies) to meal prep every single ingredient for every meal I eat. I’m trying to find quick and easy alternatives that still have quality ingredients. Also, I try to keep these meals as anti-inflammatory for me as possible.

This one is controversial with the tomato sauce, but I have to take it where I can get it. I am a huge fan of “red sauce” “red gravy” or “marinara.” Whatever your region calls it. However, Chance can not stand it. Lucky for me, this meal is one he can go along with.

THE 3 Ingredients

At the bare minimum, these are the 3 ingredients you need – gluten free pasta, Rao’s Italian sausage and mushroom sauce, and Italian sausage. I buy these brands, because they are easy and trust worthy. You could even make this a one pot meal if you wanted by boiling your pasta in a large pot first, then setting it aside while you cook the meat. Easy dinner in 20 minutes that anyone can make!

Sausage Pasta – Double The Fun With A Few Extras

Coconut Cream

The coconut cream provides a creaminess and smoothness to the harsh, acidic taste tomato sauce can bring. I have 5 cans of coconut cream in my pantry at all times. I add it to anything I can. If you are new to coconut, you don’t actually taste coconut in the pasta. It is not at all Italian sausage pasta with a pina colada on the side…don’t worry.

If you can tolerate dairy, heavy cream or half and half will work well here too. Again, it will help cut the acidity of the sauce and bring a nice smoothness. Now that I’m writing this, a big scoop of ricotta might go good on top of your individual serving too!

I may have licked the spoon after 🙂

Mushrooms

I added canned mushrooms to this particular meal, because “hell week” and I wasn’t about to make more work for myself. You can substitute fresh mushrooms here and sauté them in a little bit of the sausage grease with some onion and garlic. I unfortunately couldn’t be that extra this go round.

This is also a good opportunity to throw in some spinach or kale to let wilt while the sauce is heating up. I always try to take advantage of throwing in a few greens when I can.

Onions and Garlic

I think this is self-explanatory. I will forever have onions and garlic in every meal I make. No rules with the garlic, add however many cloves your heart and soul tells you.

Simple Sausage Pasta

There is not much to this meal, and it is not the most creative. However, it is EASY and QUICK. You can take the staples of this pasta and add your favorite type of pasta, meat, or sauce. It is just a quick dinner idea in a pinch.

Start by seasoning some pasta water with a drizzle of olive oil and salt. I ALWAYS cook too much pasta. It is so hard to know how much is enough. I used about 2 cups of dry pasta in this recipe. Bring that pasta to a boil, and cook until your liking.

At the same time, or after if you want to use one pot, brown your sausage and cook thoroughly. After you have cooked and drained your sausage, here is where you can add in your onions and garlic, followed by mushrooms. Let these veggies soak up what little grease is left in the pain.

Once you have all of your fixings back together, pour in the jar of sauce. I used Bolognese here because they were sold out of my go to Italian sausage and mushroom. Stir everything up and add in your cream of choice. All that’s left is to toss the pasta in with the meat mixture and you are done!

To Top It All Off

I threw some frozen broccoli in the microwave and called it a side for this meal. I have also made a side salad, or some roasted asparagus. My go to is to cook whatever veggies are about to go bad. I just couldn’t handle all of the slicing and dicing this time around.

Top your great big bowl of pasta with some parsley and fresh parmesan if you can tolerate. This is one of my go to comfort dishes that doesn’t leave me miserably swollen or exhausted afterwards.

Hope you enjoy! Don’t worry, you can’t mess this up!
